Happy (almost) Easter everybunny!
This year when curating this menu, I tried to think of classic brunch dishes that I would want to see on my Easter table prior to going vegan. The first thing that came to my mind was a breakfast I ALWAYS used to make which I called “eggs bene-tine” (kind of a cross between eggs Benedict & eggs Florentine = Bene–tine). So I decided to veganize my classic recipe into a “tofu bene-tine”: Complete with delicious tempeh “bacon” and a vegan hollandaise sauce, I promise you won’t want to miss trying this one out. The rest of the recipes perfectly compliment the bene-tine as the main event.
