Cashew Yogurt + Homemade Granola Fruit Parfaits

For the granola:
  • ½ cup chopped cashews
  • ½ cup chopped almonds
  • ½ cup chopped walnuts
  • ½ cup chopped sunflower seeds
  • ½ cup chopped pumpkin seeds
  • ⅛ cup (about 3 tbsp) chia seeds
  • ⅛ cup (about 3 tbsp) hemp seeds
  • ⅛ cup (about 3 tbsp) coconut shreds
  • ⅛ cup (about 3 tbsp) cacao nibs
  • 1-2 tbsp coconut oil, melted
  • 4-5 tbsp maple syrup
For the parfaits:
For the granola:
  1. Combine all ingredients in a large bowl and stir until well combined.
  2. Place in a single layer on a lined baking sheet (I love these silicone baking liners) and bake for 15-20 minute at 300 degrees (keep an eye that it doesn't start burning).
  3. Once cool, you should be able to break apart pieces of the granola almost into "bark", which make for PERFECT snacking!!!
To assemble the parfaits:
  1. In small mason jars, layer the yogurt, fruit, granola, and repeat until you reach the top.
  2. Enjoy!
